There was a blip in time where dumpling salads were trending, and my immediate reaction was what the actual hell, I have to try this. It’s usually just done with store bought dumplings, but I had to experience this crazy idea at its highest potential glory, so I made my own! For the filling I went with, ground chicken mixed with sautéed mushroom, scallion garlic and ginger, and seasoned with soy sauce, shaoxing wine, and sesame oil. Worked on my dumpling making skills, and honestly I was pleasantly surprised as it was only my second time. Pretty therapeutic, I had fun. I pan fried them for crispification, think of these as croutons that’ll also juice in your mouth when you bite into them. I kept the salad mixings pretty simple but we went nuts with the dressing, an umami packed vinaigrette. I know this salad idea is outlandish, but it was really good. The dumplings were crispy chewy and juicy while the salad was cool and acidic. It was a perfect bite. I will definitely be doing this again. If you want to make this into a SUPER easy meal, just use store bought dumplings. Don't worry, I won't tell anybody (mostly because I'll be doing it in the future).
