Chinese Chick(en)pea Salad
A FRESH TAKE on the original Chinese Chicken Salad. This one is vegetarian and replaces mandarin oranges with seasonal apricots. The chickpeas taste as good as the wonton strips and the peas add that same “pop” you get from the the snow peas. Plus, when you toast the pistachios, they tend to get a little candied, which contributes to a bacon-like texture and flavor once mixed into the greens. You’ll never go back to the regular old Chinese Chicken after you’ve tried this variation! Would be great with chicken, if you're in the mood for extra calories and/or protein!
