Croquetas de Aji de Gallina
I got back together with one of my greatest mentors, chef David condor Vega. I worked under him in a high end Peruvian restaurant where I discovered one of my all time favorite dishes: croquetas de ají de gallina A classic comfort food in Peru, ají de gallina is a creamy, slightly spicy chicken stew. It’s delicious with rice, but it’s even better in croquette form. This dish is not easy to make and I doubt many of you will even want to attempt this. But, if you find yourself with nothing to do one day and want to keep yourself busy, maybe attempt this!
