Grilled Marinated Salmon Salad
Prep your grill for the salmon and set it to medium-high heat. Grill your salmon for 4-5 minutes on the first side and flip it to the other side when the salmon is no longer sticking to the grates. Cook for an additional 3-4 minutes after turning, your salmon should flake easily and be opaque in appearance (no longer translucent). Once the salmon is done grilling, toss the greens, artichoke hearts, cucumber slices and tomato basil vinaigrette into a large bowl. Place on a platter and top with a piece of grilled marinated salmon fillet, sprinkle with cherry tomato halves and feta cheese. Then as they say… dinner is served.
