Sometimes we are looking for some good ole comfort food. However, when we think comfort we don't always think "healthy". I wanted to reimagine a Louisiana Cajun classic, Étouffée. Étouffée simply means, "smothered". Different variations of this dish are crawfish étouffée and chicken & sausage étouffée. This creamy lentil dish can be made vegan with the use of vegetable stock or you can use chicken stock to keep that bold flavor of meat.

0.5 c red bell peppers, small diced
0.25 c white wine
