Sosis Tokhme Morgh Sandwich (egg and Hotdog Omelette)
Crispy hot dogs meet marbled eggs in this nostalgic Iranian-style egg sandwich, finished with juicy tomatoes, pickles, herbs and a hit of ketchup and hot sauce. There are 3 certainties in life: death, taxes, and Persians loving hot dogs. Collectively, it’s our guilty pleasure. If you haven’t had them with your eggs, you’re missing out. I saute them in a hot pan until caramelized and crisp then crack my eggs over them. Do not flip them or they’ll go dry. Move them around, letting the raw egg fill the empty spaces in the pan until 90% cooked and let them finish off the heat. You can eat this how you like, I recommend a fully loaded sandwich with ketchup (trust me), pickles, tomatoes, then chives, tarragon and some hot sauce to cut through it all
