This is a nice way to add some protein to your meal, without overshadowing the veggie. We make this with spinach, green pepper, cabbage, or cauliflower. But I will soon experiment with other veggies like green beans, beets, shaljam, mooli, zucchini, etc. I'm sure it'll be just as delicious!
