Pandan Infused Coconut Tiramisu
This is the third iteration of my plated tiramisu-inspired dessert. The original featured a coffee and chocolate combination and a strawberry version. Now, I'm excited to share the coconut pandan tiramisu. If you're a fan of light coconut mousse paired with the tropical vanilla-like flavour of pandan, this dessert is for you. The dish features ladyfingers soaked in a fragrant blend of fresh pandan juice, coconut milk, Malibu, and vanilla. It's layered with a whipped coconut mousse made from coconut cream, mascarpone, Malibu, and vanilla, then finished with an optional tempered white chocolate and a white chocolate coconut cream. What's great about this recipe is that all the components can be prepped in advance and assembled at the last minute for a real wow factor. Or, you can pre-assemble everything and serve when ready.
