‘Papa rellena’ translating as Stuffed Potatoes, is a popular preparation in the Latin American region with numerous variations throughout Peru, Ecuador, Bolivia, Mexico, Chile, Colombia, and the Caribbean specifically in the Dominican Republic, Cuba and Puerto Rico, sometimes found in street vendors and also with variations such as using sweet potato or plantain mash instead of potatoes, this is my version of it.
