Lemongrass Ginger Shrimp and Scallop Toast
This is my spin on the classic Cantonese dim sum dish featuring two of my favorite aromatics: lemongrass & ginger. If you've never had shrimp toast, it's exquisite for many reasons but primarily because of its simplicity. Mince the shrimp or prawn, add a few flavoring ingredients, a binder, lather on toast & fry––voila. My recipe incorporates buttery scallops into the filling as well as those aromatics mentioned. The result is similar to the original but with a bit of flare. I opt for a deep fry but have included both baking & air frying instructions if you want a lighter end result.
