I DID NOT expect this to blow up as much as it did on Instagram… It’s currently my most viewed video on Instagram, and my 2nd most viewed video of all time! Anyways, I had just gotten my brand new camera (Sony FX30), and this was actually the first video I filmed on it after spending the prior week learning how to use the camera. Felt like getting creative and getting as many new shots/angles as possible, and it turned out pretty well for the video I guess, haha. Anyways, the inspiration for this recipe came from a video I saw on tiktok. I can’t remember exactly the name of the creator but it was a sausage, saffron, and gorgonzola pasta. I just thought the idea of gorgonzola in pasta was so damn good that I had to make a version of it. Landed on the idea of using gorgonzola in replacement of parmigiano or pecorino in a carbonara. Then, when I was at the store looking for pancetta, I actually found some super high quality, thick cut, black pepper bacon. I knew that’d be the perfect substitute for guanciale in this gorgonzola “carbonara”. So anyways hope y’all enjoy this take on a gorgonzola “carbonara” where I utilize carbonara techniques, with gorgonzola and bacon.
