Mollejas de Res
Mollejas is just the Spanish word for sweetbreads. If you like gizzards or liver, you may like sweetbreads for their iron/earthy flavor. But mollejas can easily be confused with chicken thighs if they have a good marinade and are cooked slow on the grill or a skillet.
