Stir Fried Gochujang Noodle Vegan
This tangy noodle dish made with udon was my quick work day lunch that was both easy and satisfying. The well cook cabbbage adds a nice crunch and natural sweetness to it and the cold silken tofu on top is like cherry on top to balance out the spiciness of the gochujang sauce not to mention it's a great plant-based protein! You can prepare the sauce ahead of time in batch and use it to make this noodle dish or get creative with it by adding it to your other stir-fried dish or even fried rice!
