From where I'm from, this barbacoa is mostly for breakfast and is cooked underground overnight. A slow cooker works great, but it might take 8-10 hours to be so tender. The pressure cooker takes only one hour, and you get super tender meat. This meat is very fatty, so they say it is great for hungover.
