Beef Birria Tacos
I never knew how much I adored braising before having birria for the first time. SPOILERS, normally, birria is made with goat meat, but I wanted to make a version that would appeal to everyone, and also have the ingredients easy to find. Furthermore, this recipe is designed to be made in an instapot for fast braising and all around efficiency. After many requests to make my own version of this delicious dish, its finally here. The braised beef is spicy, its delicate, and its all around delicious. On its own, its a banger, but when introduced to soaked corn tortillas, and Oaxaca cheese, it's been taken to a special place. If you like cheesy, saucy mouthfuls, this is a recipe that might look intimidating, but also might need you to try!
