You can prepare the meringues, cream, sorbet, and raspberry soup in advance, however, assemble the Eton Mess just before serving to keep the meringues nice and crisp. If you're short on time or want to simplify the process, you can also expedite the preparation of this dessert by using store-bought sorbet instead of homemade raspberry sorbet and by choosing pre-made baked meringue pieces.
