Celebrate summer with this cold and amazing ...what? Salad? Soup? Who cares how you categorize it, it's so good, like a party. It's good to make this a few hours ahead of time. I have some big martini glasses that I serve this in. You might have some of the cucumber/ peppers mix left over, I usually do. I put them in a salad the next day.
