My take on the classic Mediterranean dish. Other cultures refer to this as "Eggs in Purgatory." I don't like to think to overcomplicate things ... I was just hungry and wanted to use up the ingredients that I had already had in my fridge. The best part about this dish is that it can double as a pasta sauce the next day. Hope you enjoy!
