The only place I want to be right now is Italy, so to bring Italy into my home, I decided to make a vegan version of eggplant rollatini. Eggplant rollatini is a classic Italian dish featuring thinly sliced eggplant rolled around a savory filling, usually ricotta cheese, topped with mozzarella cheese and baked in marinara sauce. I recreated this amazing dish using tofu ricotta instead of regular ricotta and vegan mozzarella. Needless to say, it was a hit!

Ingredients

2 medium eggplants
1.5 cup marinara sauce
0.5 cup vegan mozzarella
