I love KBBQ and this recipe is inspired by that love. I used some flanken short ribs which are regular short ribs cut crosswise. The meat is thinner, but the surface area is bigger. To fully achieve the best Korean inspired short ribs, I used a bulgogi marinade and a pressure cooker. The thing about this style of short rib is that there is a lot of tough meat and cartilage that needs time to render down and become tender. That's why, for this recipe I made them in the pressure cooker / instant pot. To go along with the ribs, I made a quick pickled carrot and daikon salad, and a super delicious sauteed broccolini with a sweet and tangy sauce!

Ingredients

1 large Asian pear, grated
4 pounds of flanken short ribs
0.5 cup of vinegar
