One Pot Ground Beef Rice with Shirazi Salad and Garlicky Labneh
This is inspired by a dish I grew up eating called lubia polo, a rich, tomatoey Persian rice with green beans and ground beef. It’s usually made by separately parboiling the rice and making the saucy green bean mixture but here I’m doing it all in one pot. To amp it up, I also add a few not so traditional ingredients like mushrooms, garlic and ginger, and spices like coriander, smoked paprika and curry powder. The perfect weeknight meal!
