A little bit Spanikopita a little bit rustic French pie. This is a delicious part of any meal. I suggest doubling the recipe because you're going to want seconds. When choosing fresh herbs to add to this recipe consider the flavor profile. Most savory or non-scented leaves will work best. I think you could get away with adding mint leaves but only a few. I think a little bit of mint would contribute nicely to the flavor profile. My family loves this recipe so much I also turned the filling into a quiche. Add 4-5 more eggs to the filling and bake it like a regular quiche. Usually, I make a crustless quiche but I ended up using the 2nd half of the pie dough from this recipe and it turned out beautifully.
