This is basically your regular ole’ general tzo’s chicken but with whole, bone-in chicken thighs instead of smaller pieces. It’s a new perspective on my favorite Chinese take out dish–is it better? I’m not so sure. If you’d like to turn this into the traditional version, just use boneless thighs, cut into smaller pieces, and just fry once at 375ºF until crispy instead of double frying.
Ingredients
4 bone in chicken thighs
neutral oil + a splash of sesame oil for sautéing
6 tbsp potato starch + more for frying
