Lentils are king. Full of fibre, protein, vitamins & minerals, they are a solid part of a healthy diet. They are filling and delicious and this simple daal recipe shows them off in their best form (in my humble opinion). Daal is a great batch cooking option as you can make extra portions and freeze it for later. Keeps in the fridge for 3-5 days or in the freezer for 3-6 months. To defrost leave to thaw in the fridge overnight before reheating. Good source of: Fibre, protein, iron, B-vitamins, folate, vitamin A, magnesium, potassium, zinc. Dietary: V/VG, GF.
