This isn't your average caprese salad. First off, I included some garlic-parm croutons because, well, who DOESN'T want some garlic-parm croutons in a salad?? I opted for burrata over mozzarella here for extra creaminess. Now let's talk about the dressing–our roasted tomato vinaigrette. Roasted tomatoes add some extra sweetness while uppercutting you with even more tomato flavor, while the anchovies and miso paste amp up the umami. I ate this entire plate by myself and I still wanted more.
