It's like birria tacos and arancini had a baby! Probably one of the coolest fusion recipes I've ever made. This one takes the warm, rich consomme from the birria, and turns it into risotto. Then we take that risotto, mix in cheese, and turn it into arancini sticks. However, I chose to use masa instead of regular flour to make sure it tastes like a corn tortilla on the outside...

Ingredients

For the Birria & Consommé
2.5 lbs beef shanks, seasoned with salt
Cooking oil or leftover smoked beef tallow
