I recently visited New York and one of the most hyped pizza shops is Ceres. They have a very limited menu, and on that menu is this pizza for $68!! Which is crazy, I know, but I had to try it. And it really was incredible. Unbelievably thin and crunchy. Spicy, sweet and creamy. I hadn't had anything like it before. Would I consistently pay that price for a pizza, definitely not. Maybe special occasions. Orrrrr, I could just attempt to recreate it myself. So that's what I did. I think my version is very close to the real thing and you can add your own twist on it! They use a sourdough recipe blended with a few flours so I've attached one that I used and it worked really well. Also, I used balsamic vinegar whereas they might have used a reduction. Try that if you want it on the slightly sweeter side.

Ingredients

Sourdough Pizza dough
1 cup shredded low moisture whole milk mozzarella
~1/4 cup balsamic vinegar
