I was recently in Spain, and as I ate my way through the country, I discovered one of my new favorite potato dishes of all time. Meet patatas bravas, a dish consisting of crispy fried potatoes topped with the spicy, paprika-y "salsa brava", and "allioli" (Spain's version of a garlic mayo). I knew I had to remake this dish the second I got home, so here you all are. If you want to make this as easy as possible, feel free to skip boiling the potatoes and air fry or roast them. You can even use frozen French fries if you're REALLY feeling lazy. Blending the salsa brava is also optional if you don't want to get a blender dirty, just make sure to chop the onion and garlic extra fine.
Ingredients
3.5 Yukon Gold potatoes, cut into 1 inch cubes
8 cups cold water
3 garlic cloves, whole and peeled (optional)
