This is one of my all-time favorite soups. I made for this My Baby after she had dental surgery. In the process of assuring we had everything ready after she came home from the dentist (Rx, OTC meds, etc.) I forgot about making sure she had something she could easily eat. I stumbled into this recipe because I was short on time and needed to get something on the table PDQ! I pulled some chicken stock out of the freezer and threw in a pot, then I sautéed a quick mirepoix, added a little flour, made a roux, and cut up some chicken I had cooked the day before. Then I made a quick pot of rice. Tossed it all together and like magic, a new favorite dish was born! My Baby loved it and I have been cooking it for her ever since. Guess what? I now keep a quart or two of this soup on hand in my freezer.

Ingredients

4 tbsp (14g) unsalted butter
0.75 cup (100g) chopped yellow onion (1/2 of a large onion)
1 cup (120g) sliced or diced carrots (1–2 large carrots)
