
Avgolemono
The simplest yet one of my favorite soups that I have made. It won't seem like much until it's in your mouth. I was a little bit skeptical about this one, but I liked it so much, I made it a gain a couple days later! Making your own chicken stock is going to go a long way when making something like this. The salt and acidity are going to bring out all of those cozy flavors that go into making a good chicken stock. With that said, it's still going to be bangin' with a store-bought chicken stock. Don't let that keep you from making it! The egg and lemon mixture, the star of the show, is really like magic. IT takes the boring looking broth to a creamy, bright smelling, pot of gold. It's a great technique for thickening other soups too, without using cream or a roux. You can use Orzo instead of rice, and leave out the chicken if you want. I hope you enjoy!
