Galbi Denver Steaks W Kimchi Braised Cabbage
EASILY one of the best things I've ever made. Also, this cut of beef (Denver steak) is one of the most underrated cuts to ever exist. When I was in college, this was pretty much the steak that I used to learn how to properly cook a steak with. It was super affordable, had INCREDIBLE marbling, and tastes phenomenal. The only downside is that it isn't the most tender cut, but don't worry, this marinade takes care of the tenderness problem. Also, the braised cabbage is the perfect side for this, bringing a super juicy, and intensely umami element. Then, I knew I wanted to serve this with some sort of creamy sauce but couldn't think of anything fitting until my roommate, who works in a fine dining restaurant, let me in on a little technique that he learned at work which was to thicken a cream sauce with cooked rice. I decided to infuse it with garlic, ginger, and green onion, and then marble it with a momofuku black truffle chili oil, which turned out to be and absolutely unreal combo.
