This is one of my favorite burger variations because not only do i love smash burgers, I love potato skins as well. It was a no brainer to combine them both. The cool thing about using loaded potato skins as a bun is the scallions, bacon, and sour cream, create a nice sauce for the burgers that compliment each other really well! DISCLAIMER: I have no problem using the microwave, but I know some of you might. In that case, you could totally cook the potatoes in the oven instead, cooking times might vary!
Ingredients
4 large potatoes
4 strips of bacon
3 cups of cooking oil
