After I made this sandwich for the first time, I realized how much the toppings resemble what I would normally include on a charcuterie board - in the best way! The sweet roasted red peppers complement salty prosciutto perfectly. I also enjoy adding a little drizzle of honey for added sweetness and flavour. And this wouldn't be a "melt" without the cheese! I used both mozzarella and provolone which make this sandwich oh so gooey!
Ingredients
0.5 Ciabatta sandwich bun, sliced in half & toasted
0.75 cup roasted red peppers, the equivalent of about 1 pepper (see below for homemade recipe)
Red pepper flakes, optional garnish
