This is my take on the classic Crêpes Suzette — simple in flavour with a fresh twist. Rather than soaking the crêpes in hot orange sauce as in the traditional version, these are filled with a light vanilla citrus cream and finished with a drizzle of orange–vanilla sauce. They're gently reheated in the oven or microwave and served hot with more sauce and a scoop of ice cream. A little different and slightly more experimental but as enjoyable. Makes: 6–8 portions (each portion contains 2 crêpes per person). You can also serve just one crêpe per portion to increase the number of servings. However, this recipe suggests two small crêpes per person. Difficulty – Medium
