Hot Spiced Apple and Walnut Pie Served with Vanilla Ice Cream
This is a warm, spiced apple pie with a salted caramel–walnut base, and a beautifully flaky butter pastry on top. It’s served hot with a white chocolate crème anglaise foam and vanilla ice cream (you’ll find several homemade versions in the ice-cream section, or you can use a good store-bought option). It reminds me of an elevated apple crumble and a new favourite amongst the apple recipes! This recipe is fairly straightforward, but cooking the apples properly is essential. If you’d like to simplify the process, you can keep just the apple filling, the pastry, and vanilla ice cream — everything else is optional. The recipe makes four very generous portions, but you can easily stretch it to six or even eight smaller servings, depending on how you plan to plate it.
