
Empanadas
In 2017 I lived in Canary Island for about a year. I discovered the Empanadas and it was a proper addiction. Tuna empanadas or as the Spanish like to call them “Empanadas de Atún”, are an ancient recipe originally from Galicia (Spain) and Portugal. They first appeared in Medieval Iberia during the time of the Moorish invasions. A cookbook published in Catalan in 1520 mentions empanadas filled with seafood.
