Traditional risotto requires about 20 minutes of continuous stirring at the stove. But did you know it comes out really well in the pressure cooker with only 8 minutes cooking time? Note: this recipe is what I make for the two of us in my 6 quart Instant Pot. If you have a larger pressure cooker, feel free to double it.
