Welcome to fusion foods where we combine amazing dishes across cultures, this is jollof biryani. I thought this first dish would be the perfect way to bridge this series with my last one on chicken and rice. We’re starting out super ambitious, combining two of the greatest rice dishes known to mankind. The question that lead to this creation? What if we took a chicken biryani, but instead of regular white rice we made jollof rice. We start off how any other biryani does, with those delicious crispy onions, which leaves behind an onion infused oil that’s out of this world. The chicken marinade is also what you’d find in a traditional chicken biryani, yogurt, aromatics, herbs, spices, and those crispy onions with their oil. but things take a left turn quick when we start making the base for jollof rice. I mixed this with parboiled basmati rice that was cooked 70% of the way then finished the dish as you would a normal biryani. We we sear the chicken to get some nice color on it and finally we’re ready to build the biryani inn layers. Chicken, rice, onions, cilantro and mint then rice. Bake it in the oven for another 30 minutes and you’re left with what I think is the greatest rice dish ever created.

Ingredients

4 large onions, thinly sliced
4 chicken quarters, split into thighs and drumsticks
1 Juice of lemon
