I’ll never forget my first chia pudding — part of what was probably the best hotel breakfast spread I’ve ever experienced. And trust me, I know my hotel brekkies! It was at the Hilton Bandung (Indonesia), where I was absolutely spoilt with an incredible assortment of food. Those chia puddings were divine — more like a dessert, really. I keep mine a little healthier so I can enjoy them all week. The best part? Chia pudding isn’t just delicious, it’s packed with benefits AND so simple to make. We usually prepare a big batch — one tub of yogurt (about 6 cups) — so we can enjoy it throughout the week. It even makes a great school lunch!
