This is a perfect weeknight pantry dish- use either fresh or leftover fish or chicken, and you have dinner on the table in about 20 minutes. Serve over white rice. Green curry i snot spicy. It's full of flavor, but does not have any heat. You can use a red curry paste for more kick.
Ingredients
2 cup chicken, cut into 1 inch pieces (or fish, or shrimp, etc.)
2 cup any vegetables you want red bell pepper, butternut squash, eggplant, diced onto 1 inch pieces
0.5 onion, sliced
