Kotlet is a traditional meat cutlet loved all over Iran. Growing up, this is what my mom packed for us when traveling, often in the form of a sandwich. I made it here for the first time and wanted to make an elevated version of these sandwiches I’ve had so many times as a child. This is just how I’m making it though and the beauty is that each household has their own recipe that’s been passed down for generations. For example, many will omit the carrot (I like the sweetness it brings), use a different combination of spices, or skip the breading. You can even make this with ground chicken or turkey–always feel free to adapt a recipe to your liking!

Ingredients

1 large potato
1.5 lb ground beef or lamb (or a combination of the two)
Hefty pinch saffron
