This is the MOST tender & succulent pork belly, ever. I don't eat pork often but after a life-changing visit to Kin Khao, a michelin star Thai Eatery in San Francisco, I knew that would change. While several of the dishes I enjoyed were stand-outs, the caramelized pork belly was mind-blowing. Described as a "sweet, savory, voluptuous pork belly cooked in a cast-iron pot" that truly exceeded all of my expectations. The flavors were simple & straightforward allowing the marvelous texture to shine through. This recipe is inspired by that majestic dish & while it's not a replica, it's irrevocably delectable. It does require a Sous Vide, I used the Crockpot Slow Cook Sous Vide, but any will do. Whip this up for a special occasion or a nice treat for yourself. I recommend serving it atop something that can absorb the flavorful sauce the pork is bathed in.

1.75 lb boneless pork belly, cut into 2.5 in strips
1 tbsp avocado oil
red pepper flakes
