Shake Shack Shroom Burger
One of my all time favorite fast food items is the shake shack shroom burger. It’s a fat layer of cheese sandwiched between two portobello mushrooms then deep fried and thrown into pillowy potato buns. This is my take on that, and dare I say we improved it? I remade the famous Shack Sauce but put my own twist in it by adding miso for umami, gochujang and jalapeño brine (instead of pickle brine) for a kick and smoked paprika for some–well, smokiness. Definitely an improvement there. The higher quality cheeses I used here definitely helped as well. Also not traditional at all, but I added some curry powder to the cheese mixture which helped create a bit more of a party in the mouth. This was honestly not that hard to make, and if you don’t like to deep fry then feel free to do it in the air fryer or oven for a healthier, less messy version.
