These cacio e pepe roast potatoes are my take on the roast potatoes you’ve probably seen all over your feed by now. These might be the best potatoes I've ever had, and this is no exaggeration. Crisp outside, fluffy inside. The pecorino Romano is the X factor and it’s countered perfectly by the fresh cracked black pepper. It’s a variety party of textures and flavors and this stuff was truly addicting.
