Leek and Potato Soup
I still remember the first time I tried Leek and Potato Soup. It was at a work event, and back then, I wasn’t much of a soup eater or an adventurous one when it came to food. When the soup was served, I had to be polite, so I decided to at least take a few spoonfuls. To my surprise, I loved it! It taught me an important lesson: always try new things, or you might miss out on some truly delicious experiences. Turns out, Abbu loves this soup too – I believe it’s his favourite. Lucky for us, I found the recipe in a children’s cookbook we gifted to Shafia Api when she was little. I loved it so much that I bought the book for myself and made a few tweaks to the recipe. Don’t forget to garnish with chives – they’re especially tasty when they’re fresh from our garden, thanks to Ayla! The original recipe is from Usborne: Healthy Things to Cook and Eat.
