Mango Sticky Rice 2.0
This is a more refined version of the mango sticky rice I have made before. The idea remains the same, but the details have been simplified and sharpened with each revisit. The sticky rice is gently infused with vanilla, giving it a softer, more rounded flavour. The mango is used in two ways. Thin slices are rolled into a simple rose and placed on top of the rice, while the remaining mango is finely chopped and lightly seasoned with vanilla seeds and a touch of citric acid or lime juice. This adds freshness and a gentle brightness to balance the richness of the coconut. Coconut jelly, coconut cream sauce, and coconut sorbet complete the dish, bringing contrast in texture and temperature without taking focus away from the mango and rice. The plating is clean and consistent, aiming for clarity rather than embellishment. Serves 4 generously or 6 smaller portions Difficulty: Intermediate
