This roasted chicken in red wine sauce is flavorful dish, similar to Coq au Vin with my own twist. It's quick and easy, perfect Sunday meal and a great dish for special occasion. You can serve this dish with many sides like white rice, rice and beans, boiled or roasted potatoes. It pairs great with mashed potatoes as well. In my culture we clean our chicken, in others they don't so do what you feel comfortable with.

1 cup dry red wine
2 cup chicken stock
