For folks who are Celiac, IBS, gluten-intolerant, or just looking for other gluten-free options, this is going to be wicked delicious! I created a crust for cheesecakes, crumble bars, pudding pies that has been an absolute HIT! The best part about this crust is that you do not have to do a pre-bake. Yeah, you read that right. This is easy to form and you don't have to worry about this falling off the side while you create this. This reminds me of nutty oatmeal bars from my childhood that were so good. Slightly warmed and a scoop of ice-cream on top and you really had something special. Now, if you are not required to be gluten-free, you definitely can use regular AP flour for this recipe. You will still have the same delicious results. I have used this for cheesecake filling, pumpkin pie filling, frangipane base, and even just used this mix to bake off nutty oatmeal balls/bars. Seriously, this is the versatile recipe you want! I do not recommend using a mixer as you may risk burning out the motor on this recipe. It handles quite well if you place your dry ingredients in a large mixing bowl. In your mixer, for the rest.
