I keep grabbing these girthy a$$ cucumbers from the grocery store so let’s actually make something with it. My cold cucumber noodle salad with a peanut chili sauce hits all the nutritional bases (for me, at least) featuring udon noodles with a decent base of protein, some rotisserie chicken, fiber from the edamame, and a perfectly balanced sweet and savory sauce. I made three servings to meal prep for the week and….they were all gone within a day and a half oops
