menudo

This is one of the ancient and traditional dishes in Mexico; even tho is not everyone's preference, Menudo is a really good dish and an excellent cure for hungover. The most important process is the cleaning of the tripe. There is also a Filipino menudo which is very different from the Mexican one. Beef tripe is consumed in many countries in different ways.
